Spinach & Artichoke Pizza

After last night's Spinach & Artichoke Pasta, I decided to try it on pizza with some chicken, and I was completely blown away with the results.  I would say more, but this pizza deserves utter silence except for the sound of chewing.

Spinach & Artichoke Pizza
(adapted from Spinach & Artichoke Pasta)

1 batch of Pizza Dough
1 lb. chicken breast
1 14oz. can of artichoke hearts, diced
1 10oz. package of frozen spinach, thawed and chopped
2 tbsp olive oil
2 cups mozzarella cheese

Sauce:
3 tbsp butter
1/4 cup flour
1/2 white onion
2 tbsp minced garlic
2 cups milk
1/2 cup grated Parmesan cheese
1 cup cheddar cheese
1 tbsp Italian seasoning



Mix pizza dough as directed.

Preheat oven 375F.

On medium heat, saute onion in olive oil for 2-3 minute.  Follow garlic for an additional 1-2 minutes.  Add chicken and cook thoroughly.  Set aside.

In a saucepan, combine flour and butter to create a roux.  Slowly add milk while stirring.  Once the mixture has thickened slightly, slowly add both cheeses until the cheese is completely melted.  Toss in the pan of chicken and vegetables and the Italian seasoning and cook an additional 1-2 minutes.

Spread out the pizza dough into a thin circle.  Spread some sauce over the pizza dough.  Top with mozzarella cheese, then the spinach and artichokes.

Cook for 20-25 minutes.
